We’re not cheese connoisseurs. We’ve admitted to like a couple of classic mozzarellas, a burrata, and a melty American cheese, among other such mundane options. That being said, there is a time and a place for everything, and while we may prefer a beautiful milky creamy ball of mozzarella on a daily basis, where would our lives be if we couldn’t indulge in the occasional stinky cheese from a well-curated cheese plate?

These are some of the questions cheese virgins may have on their first visit to the shop, so don’t worry! Everyone needs to start somewhere, and you’ve arrived at the correct spot.

This slideshow contains images and details from a completely biased and opinionated list of 13 kinds of cheese that we believe every foodie, cocktail-party-thrower, and cheese-eater should be familiar with. They range from utterly inexpensive to opulent, from all over the world, and from all three major types of milk.

The feta cheese

Cheese made from goats
Next up is a personal favorite of mine: goat cheese. Goat cheese comes in at 74 calories per ounce, just one calorie less than feta. Crumble it on top of your favorite salad to take it to the next level. That extra creamy, tangy flavor makes it easy to eat your vegetables.

Mozzarella Mozzarella
With 84 calories per ounce, mozzarella isn’t too bad for you—that is until you wrap it in bread crumbs and deep fry it. But, hey, the thought is what counts. Using this recipe, you may make your own mozzarella sticks.

Brie
Brie cheese is next on the list, at 94 calories per ounce. It’s another personal favorite of mine, especially when wrapped in pastry dough and packed with jam. The flaky pastry complements the creamy, melty cheese well.

The blue cheese
Blue cheese, at 99 calories per ounce, is somewhere in the middle in terms of calorie count—it could be better, it could be worse. Fortunately, I’m not a lover of blue cheese, so I’ll avoid it regardless of how many calories it has.

Although standard cream cheese has more calories per ounce than some other cheeses, 99 to be exact, you can reduce some of those calories by using light cream cheese. So, keep eating your bagel and light cream cheese in the morning.

American Cheddar
When compared to other cheeses, good ol’ American cheese has a high-calorie content of 105 calories per ounce. But what’s a few extra calories if you’re already eating a burger?

Swiss Cheddar
Swiss cheese ranks eighth, with a total of 106 calories per ounce. Like its taste, it’s not the worst, but it’s also not the finest.
